Cranberry Almond Stovetop Granola

INGREDIENTS
1 tablespoon coconut oil (or your favorite cooking oil; not olive oil)
2 cups rolled oats
1/3 cup butter
2 tablespoons honey
1/3 cup packed brown sugar
1/2 cup chopped almonds
1/3 cup dried cranberries

 DIRECTIONS

Ø       Heat the oil in large skillet over medium-high heat. Add oats; cook and stir until they begin to brown, about 5 minutes. Remove from heat and spread out on a cookie sheet to cool.

Ø       Melt butter in the same skillet over medium heat and stir in the honey and brown sugar; stirring constantly, until bubbly; careful not to scorch. Pour the oats into the skillet. Cook and stir for another 5 minutes or so until there is a yummy looking texture and color. Pour out onto the cookie sheet and spread to cool.

Ø       Once cool, stir in the almonds and cranberries. Add any additional nuts or fruit to make it your own recipe.
