Cranberry Vanilla Granola

Ready in: 30-60 minutes
Serves/Makes: 7 cups

Ingredients:
4 cups old-fashioned oats
1 1/2 cup sliced almonds
1/2 cup packed light brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup vegetable oil
1/4 cup honey
1 teaspoon vanilla
1 1/2 cup dried cranberries (and/or raisins)

Directions:
Preheat oven to 300 F. In a bowl mix the oats, almonds, brown sugar, salt and cinnamon. In a saucepan warm the oil and honey being careful not to overheat. Whisk in vanilla.

Pour and mix the liquid into the oat mixture. Finish mixing by hand. Spread granola onto a large baking pan (pan with lip is best).

Bake 40 minutes, stir mixture every 10 minutes; bake to golden brown. After baking allow granola to cool outside the oven. After granola is cool, stir in cranberries (and or raisins). Seal granola in an airtight container or self-sealing plastic bag.
