Beyond Fruits and Nuts

2 cups rolled oats (not instant)
1 cup pecans or toasted almonds
1/4 cup sesame seeds
1/2 cup sunflower seeds (toasted or raw)
1/2 cup coconut (unsweetened or sweetened)
1/4 cup toasted wheat germ (may omit)
1/2 cup raisins
1/2 cup dried fruit (dried apricots or craisins or dried apple)
1/4 cup oil (not olive), (we like coconut oil – Better for you too!)
1/2 cup honey

Mix the oats, nuts and grains in a large mixing bowl. Measure oil pour into bowl (if you use coconut oil you may need to warm it just slightly so it will pour). Measure honey in the same, unwashed cup. The oil helps the honey exit the cup. Mix everything together until evenly coated. Pour out into baking pan, large roasting pan or a cookie sheet with a lip works well. Bake at 300 degrees for 30 minutes, but turn it with a spatula every ten minutes or so. Toast until all is an even golden brown. When finished cooking, returned the baked granola to the mixing bowl, add the raisins and fruit and toss or stir to combine.
